We love Paella Valenciana. We've hired them twice to cater events at our house and our guests love them. As soon as we send out the invite saying we are having a paella party the positive replies rush in. They have a minimum order of 25 people and a sliding price range based on which types of meat/seafood you want in the paella. They arrive about 2 hours prior to your serving time, set up their cooking station outside, and cook everything onsite. We always have our guests arrive about an hour before serving time so they can watch the cooking process. Great for an easy party. I let them do the paella and then I can throw together a few side dishes and appetizers. (Or they can do those dishes as well according to their website).
